Green Bean Salad with Marinated Tofu and Almonds

Try our savoury and healthy green bean salad, perfect for a quick lunch, but full of energy; Ideal for a lunchbox at work or a picnic! Tofu marinated with soy sauce in contrast with the sweetness of green beans and almonds, will give a unique flavour to this simple and tasty salad. Serves: 4

Ingredients:

  • 1/2 kilo green beans
  • 225 extra firm tofu gmo free
  • 3/4 tamari
  • 3 tbsp extra virgin olive oil
  • 1 tbsp slivered almonds
  • 1/2 tsp black pepper
  • 1 pinch of table salt

Method

Preheat oven to 180. Cut the tofu into cubes ¼ inch wide. Pour the tofu submerged with tamari in a bowl and marinate 30 minutes into the fridge. Meanwhile, wash the beans and steam or boil 5 minutes. Season the green beans with 2 tbsp of extra virgin olive oil and a pinch of salt. Pour the beans on a baking tray lined with parchment paper, making sure not to overlap the vegetables. Add the drained tofu and bake at 180 for about 12 minutes. Meanwhile, season the slivered almonds with 1 tbsp of olive oil and add the almonds on the other ingredients. Finally, grill for 3 minutes, until the tofu, almonds and green beans are golden brown. Remove the baking tray from the oven and season with a sprinkling of black pepper. Pour the green been salad into bowls and serve slightly warm or at room temperature.
